Sambhar is a definite part of south indian meals. Sometimes, they make it even more than once a day – for breakfast and later for lunch or dinner. Brimful of the goodness of toovar dal and assorted vegetables, it is nutritious everyday fare and is so versatile that it can be taken with rice, idli, dosa, vada, upma, and just about any south indian snack.

Sambar Powder:

Sambhar powder is a spice blend used throughout India, especially the southern states. As the name suggests it is used to make Sambhar, a broth made with vegetables and cooked lentils flavoured with tamarind pulp and sambhar powder.

Ingredients

  • Toor dhal – ½ cup
  • Aksa Sambar Powder – 3 tbsp
  • Mixed vegetables-11/2 cup cut into medium size
  • Tomato-1 no. cut into medium size
  • Onion – 1 no. cut into medium size
  • Curry Leaves- as required
  • Tamarind Juice-1 fistful
  • Cooking Oil -as required
  • Mustard seeds – 1tsp
  • Red Chilly – 2 no.s
  • Coriander leaves-as required
  • Salt-as required

Directions

Pressure cook dhal with water. Mash the cooked dhal and add cut vegetables, onion, tomato, salt and water as required. Cook till all the vegetables are cooked well. Then add tamarind juice and Aksa Sambar Powder and boil it for 5-10 minutes. Heat oil in a pan and splutter mustard seeds, red chillies and curry leaves in it. Add this to Sambar and mix well. Garnish with coriander leaves for more taste.
