There are several different styles for making Egg Curry and this recipe is North Indian in origin. Serve Egg Curry with a vegetable side dish and rice.

Ingredients
Boiled Eggs – 4 no.s
Sliced Onion – 3 no.s
Crushed Ginger & Garlic – 1 tbsp
Curry Leaves – as required
Salt – as required
Tomatoes – ¼ cup sliced
Cooking Oil – as required
Aksa Egg Masala – 2 tbsp
Mustard seeds – ½ tsp
Directions
Heat oil in a pan and splutter mustard seeds. Saute sliced onions and curry leaves till onions turn golden brown. Add crushed ginger and garlic and sauté again. Add Aksa Egg Masala, sliced tomatoes, salt and fry for 5 min. Add sufficient water and boil it. Then add boiled eggs and garnish it with curry leaves.
